Ingredients :
1/2 cup fresh parsley (chopped)
6 eggs
1/2 cup chopped onion
1/4 cup plain flour
1 sweet pepper, washed and grated
1/2 teaspoon salt (as desired)
1/4 teaspoon ground allspice (as desired)
1/4 teaspoon ground chilly papper
1/2 teaspoon baking powder
lemon zest
2 cups vegetable oil
How to make :
- Wash chopped parsley and drain well. Mix chopped onions, salt, spices, parsley, chopped sweet pepper and zucchini.
- In another bowl, mix flour with baking powder then add to vegetable mixture.
- Blend eggs in seperate bowl, stir-in lemon zest. Add mixture to vegetable mixture and stir.
- Heat oil in a pan, pour in a spoonful of omelet.
- Turn over each ball till it is golden-brown from both sides. (repeat it, until finish)
- Serve balls warm with salad and fried potatoes.
